Juniper Berries have a wonderfully piney and herbal flavor, much like rosemary, but are more resinous and with citrus overtones. A few berries are great for braised wild game meats.

USES: Juniper berries are ideal venison, lamb, duck, rabbit, wild boar or other rich meats.  Crush the berries and add to braised meats, spice rubs, marinades and sauerkraut.
